I think I'm not the only one who came across this article in order to find ways to select the audio track / subtitle in the VLC player automatically (for example, for TV shows, so as not to change them constantly). No methods from Google helped, I solved the problem myself, I hope that I will help at least someone.
Everything is very simple: You need to go to Tools> Settings> Show all settings> Input / Codecs and there is an item “Audio track” and “Subtitle track”, by default it is -1 (it means there will be a choice of the first track), just change to the corresponding our audio track number minus one. For example, if the track is the fourth in a row, then you need to write the number 3, etc.

But in fact, it's not about preferences, but at: LAV Splitter, which is displayed next to: FFv on the taskbar.

Namely: Prefer Audio Stream with the Highest Quality, which is translated into Russian: Prefer high-quality audio stream.
In general, in my case it was like this:
I myself determined how I need (via: VDub) to the places I need (1, 2 and 3) of the audio tracks of one movie.
I began to open the film in: MPC, and in short, instead of the first track (which I myself determined the first) to stereo, another 5.1 sounds, which is defined by the second track, there was the third one, but it did not skip to it.
It immediately began to come to me that it was because of some kind of switch, which, arbitrarily, for some reason, selects another audio track.
I began to rummage through the settings, but except for the standard switch of audio tracks (well, where you yourself must choose a track from the list), I did not find anything.
Right now I ran into interest in similar articles (this one last), where they suggested changing preferences, changed, in my case it’s by the numbering of roads: 1 2 3.
Everything worked correctly.
But by doing this, I only drowned out the problem, and did not solve it.
Because it was clearly not a matter of preference.
I began to rummage further, and in interest still read about a certain: LAV Splitter.
It began to reach me that the whole thing was possible in him, since I remembered that he was responsible for the audio, sort of.
In short, on the taskbar, I double-clicked on the icon that says: LAV.
A window appeared with some, as I understand it, settings (properties) of this very one: LAV.
Then I began to look in it for something like: “Auto”, but I didn’t find anything for this word.
Further, my eyes fell on the settings: Blu-ray Subtitles, but there, apart from the subtitle settings, of course, nothing was found.
I had no choice but to: lower my gaze even lower.
Where in: Demuxer Settings, I was attracted by one of the functions starting with: “Prefer” (the very first with such a beginning), namely: Prefer Audio Stream with the Highest Quality.
And my knowledge of (small) English, it became clear to me here exactly what is written about audio tracks (because: Audio Stream, can be translated as: Audio stream or audio track).
Well, and then, through the translator, I added everything translated into the fact that this is the same parasite (although I don’t know, maybe someone likes that it is self-willed), that function (against which the checkmark was by the way), short I switched the audio tracks of the film to those that were higher in bitrate (as it turned out), and since the 2nd track was really higher in bitrate, the player switched to it.
In short, I just unchecked this: Prefer Audio Stream with the Highest Quality.
And now everything fell into place.
That is, the movie tracks again work in the correct order, that is, which one was assigned as the first track in: VDub, and it plays by default, and not: MPC selects.
The next time, just when installing codecs, you will need to be more careful with the placement of checkmarks and another.

But there, the English language drowns out Russian, and I needed to stand 4th with a clear, clear sound.
